Delicious, easy to make, vegan, and healthy sweetness because there’s no added sugar, only strawberries, brown rice syrup and apple juice.
Ingredients:
20 ounces (about 3 cups) fresh or frozen organic strawberries
12 ounces soft silken tofu
1 tablespoon tahini
1/2 cup brown rice syrup
3 1/2 tablespoons agar flakes
1/2 cup organic apple juice
Pinch of salt
Directions:
1. Puree the strawberries in a blender.
2. Add the tofu, tahini and rice syrup. Blend until very smooth. Set aside.
3. In a small saucepan combine the juice and agar flakes and bring to a simmer, stirring until the agar is dissolved (usually about 5 minutes).
4. Pour the apple juice / agar mixture into the blender with the other ingredients and blend again for a few more minutes.
5. Pour the mixture into either parfait glasses or dessert bowls and refrigerate until firm, about 2 hours. You can also pour the mixture into a larger bowl or baking dish and refrigerate, then scoop out portions as desired.
